Healthy Cottage Cheese & Tomato Salad For A Single Person | Recipe

A salad simple and assembled in less than a minute but also heavenly tasty. No hidden fat content. Words we all want to hear, right?

Here is the recipe for one single bowl. The perfect amount for a fueling late night snack.


1 slice of rye bread, toasted
1 tomato, small dices
2 spoons of good organic cottage cheese
a few basil leafs, chopped in thin strips
1/2 small onion, very thinly sliced
salt & pepper to taste

Assemble everything in your bowl while the bread is toasting. Already salt and pepper.

The secret is to use a good cottage cheese. I had an organic brand with 4 % fat content which is still very low but enough for richness and allows to omit adding oil. Not that I am against olive oil. Just sometimes it is great to eat something very light and don’t bother with preparing a dressing.

Now that you’ve salted the salad, the delicious juices already started to come out a little. The right time to throw in the bread which is toasted to a crunch and also diced. Stir.

The bread will soak in slightly. Ah wonderful. Now eat!
